Caramel Peanut Butter Popcorn
Got a craving for popcorn and for a Reese's Peanut Butter Cup? Why settle for one, when you can have both?! This recipe provides the best of both worlds.
What You'll Need
2 tablespoons canola oil
1/2 cup unpopped corn kernels
1/2 cup peanuts (or sliced almonds)
2/3 cup brown sugar
2/3 cup light corn syrup
2 1/2 tablespoons unsalted butter
1/2 tsp salt
1/2 cup creamy peanut butter
1 tsp vanilla extract
1/2 Cup Chocolate Chips
Heat oven to 250 degrees, and pop popcorn kernels on stove.Place popcorn in a large bowl with almonds or peanuts.
In a medium sauce pan, combine brown sugar, corn syrup, and butter. Heat over medium heat until boiling, let cook for 3 mins.
Add peanut butter, and vanilla extract. Pour mixture over popcorn, and toss to coat evenly
Spread Popcorn mixture on a large baking sheet lined with parchment paper and cook in oven for 1 hour stirring every 15 mins.
Melt Chocolate chips in microwave. When popcorn is out of the oven, drizzle chocolate over popcorn.
