Chocolate Chunk Cookies
It has been a stressful week here in Vermillion, as well as around the country. We thought it was appropriate to make a snack that was more of a comfort than others. So this week, pour your self a glass of milk and enjoy these delicious Chocolate Chunk Cookies.
What You'll Need
2 cups of all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 sticks of unsalted butter
1 cup light brown sugar
1/2 cup granulated sugar
1 large egg
1 egg yoke
2 teaspoons vanilla extract
Semi-Sweet Chocolate Chunks
Pre-heat heat your oven to 325, and in a microwaveable save bowl melt your butter. In a large bowl whisk your flour, salt, and baking soda.
Using a mixer, combine the brown sugar, granulated sugar, and melted butter until smooth. Then beat in the egg yolk, egg, and vanilla extract.
Turn your mixer on low, and slowly add the flour. Use a spatula to push down the sides if needed. Mix until well combined. Then add your chocolate chunks and mix until they are well combined.
Scoop out dough into heaping tablespoons and place on a baking sheet lined with parchment paper. Bake for about 17-18 minutes, until the edges start to brown. Let the cookies sit for 10 minutes on the baking sheet before moving them to a cooling rack.
