Avocado Mango Salsa

It is a new year, and like most of you, I have resolved to eating better. An attempt I guess at undoing the last few weeks of December. This avocado and mango salsa is a great way to start. It is little sweet and a little spicy, a great way to kick off 2021!

What You'll Need

1 Mango, peeled and diced

1 Avocado, peeled and diced

1 tomato, diced

1 clove minced garlic

1 jalapeño, de-seeded and diced,

1/4 cup diced cilantro

2 tbsp fresh lime juice

1/cup diced red onion

1 tbsp olive oil

salt and fresh pepper to taste

Step 1

This is probably the most difficult step: cutting your mango. Mango's have this secret seed that is tough to spot. With a really sharp knife, cut the mango in half. Then try to cut around it, leaving the fruit in quarters. After that put the skin side down on your cutting board, and run your knife right along the skin, separating it from the fruit. Then dice it.

Step 2

Add all of the ingredients into a bowl and mix. Then let the salsa chill for about 20-30 mins. Then enjoy!
